Chefs Danny Natoli (previously head chef of Neptunes) and Adrian Li (ex Saigon Sally) have joined forces to develop modern Italian fare at Rina’s in Armadale. Having both met whilst working at Donovans, their impressive resumes have culminated in the continuation of an Armadale legacy along with co-owner Lisa Li. We caught up with Danny and Adrian to get the low down on their next culinary adventure.
Congratulations on Rina’s! Tell us a bit about Rina’s and how you came about taking over Rina’s?
Rinas legacy in Armadale was legendary. It was a honour to be allowed to continue the restaurant after her passing. We are keeping it in the family but giving her a little bit of a modern touch.
Your menu isn’t your traditional Italian fare. Tell us about your menu and what are your inspirations?
Well cooked food that is inspired only by what is in season is the traditional Italian view on food. This is what we do. We cook with only what is available at Torello Farm we use these freshly harvested ingredients and show case them using techniques we have learnt previously in our career
You both have different backgrounds, what is like working together and how do you collaborate on the menu?
Our cooking backgrounds are the same. Which is all that matters. We have a synergy that is rare to find between chefs. When we work together our ideas flow organically because we have worked together for so long and trained at the same place.
What are some of your favourite ingredients you use?
Good olive oil! Organic flours for our focaccia & persimmons were delicious this ear.
What can diners look forward to when they visit Rina’s?
Piccolos of prosecco ! Silky handmade pasta! Sicilian and local low intervention wines! And Alberto
