One of the stars of this year’s Masterchef, Sam Gant, will take part in Truffle Melbourne and sat down with us to talk about her love of Truffles.
How did you get involved with Truffle Melbourne?
I’ve become involved with Truffle Melbourne through my business Pot & Pan. My partner Celeste and I will be exhibiting with Pot and Pan and my sister will be there as well with her paella business, so it will be a real family affair. I love truffles and am thrilled to be involved.
What are your favourite ingredients to go with Truffles?
My favourite ingredients to pair with truffles are butter, cheese, homemade pasta, beautiful proteins like, a nice piece of rockling with hand cut fries & kale or rib eye steak, eye fillet and of course potatoes, one cant beat a truffled mash.
When cooking with Truffles – are there any tips you can give?
When I cook with truffles I am sympathetic to the truffle itself, the truffle has to be the hero; everything I add compliments the truffle, you don’t want to add too many spices or other aromatics as this is the heart of the dish and one wants to make sure it shines through but doesn’t overpower.
Do you have a favourite Truffle recipe?
I have one that I love. Rib Eye steak on the bone with a homemade butter & truffle shavings, a side of truffled mash & pickled red onion watercress salad. Or just a simple Piadina with raclette (a swiss semi hard cheese) melted into the bread then with some truffle shavings and rocket.
