WOODY. P has revamped its mouth-watering Italian offerings with a new seasonal menu created by its new Executive Chef, Timothy Martin. With an impressive resume that spans over more than 15 years, Timothy most recently served as Head Chef at acclaimed Melbourne restaurant The European and was awarded Young Chef of the Year in this year’s The Age Good Food Guide.
Timothy’s new Spring menu takes WOODY. P back to its authentic Italian roots, featuring dishes such as bone marrow crostini, swordfish crudo, Moreton Bay bug tagliatelle and suckling roast lamb. The menu focuses on utilising gorgeous local produce, and is complemented by an exciting and extensive cocktail list.
For customers looking for a quick bite, the downstairs section of WOODY. P offers a more casual dining experience with authentic wood-fired pizzas.
Couturing had the chance to preview WOODY. P’s incredible new seasonal menu, and to have a chat with Timothy to discover more about the new menu, and what more we can expect to see from WOODY. P in the coming months.
Congratulations on your new role as WOODY. P’s Executive Chef! What was the intention of having a different menu upstairs and downstairs?
We wanted to clearly separate the two distinct offerings at WOODY P – restaurant and bar. The downstairs menu will be relaxed and fun, with special offers fresh from the new pizza oven going in late December, while upstairs will remain more refined.
Your menu is Italian influenced. Is there a particular area of Italy that inspires you?
I definitely draw inspiration from Venetian and Roman stryle food – it’s light, easy, delicious and accessible.
WOODY. P has an impressive cocktail list. We enjoyed the delicious Sgroppino cocktail over dinner – what’s the story behind it?
Sgroppino is a classic drink of Venice and traditionally served as a palate cleanser between courses, generally for seafood and meat. I like to put a modern, Melbourne twist on it with the help of the bar team!
With Christmas quickly creeping up on us, does WOODY. P have any packages that might suit those looking to celebrate a special occasion?
We do! At the moment we offer the Chef’s Italian Feast ($55 per person) which features a range of menu favourites. For functions, the downstairs basement will offer a completely new area. Stay tuned for more details on this one….
Your menu really focuses on and celebrates Victorian produce. What do you look for in a local producer?
Rather than just inspiring produce, we look for inspiring people. We’re really lucky to work with individuals who are involved in the day-to-day operation creation, which in turn creates stand-out produce.
