Melbourne’s food and drink scene is about to get a bold new addition with the launch of Daaru, a cocktail bar perched above Chapati’s new location in Crossley Street. Taking inspiration from its Indian heritage, Daaru is redefining the city’s cocktail culture with daring flavour combinations that push the boundaries of mixology. From smoky spices to tropical nectar, the bar’s unique concoctions promise a drinking experience unlike anything else in Australia.
Leading the charge is the Tandoori Temptress, a signature cocktail blending tandoori, tequila, and tropical nectar into an unexpectedly harmonious delight. The menu continues to surprise with creations like the Bengal Tiger, a refreshing mix of rum, pineapple, pomegranate, and fennel, and Sunset Over the Himalayas, a smoked apple whiskey sour. For those who prefer a more familiar favourite with a twist, Daaru’s espresso martini comes with a subtle pink pepper and jalapeño kick.
Owner Arjun Dewan says the inventive drinks are already sparking curiosity and conversation. “Our creative cocktails exude our team’s love of experimenting with delicious ingredients and bring a sense of fun and ‘theatre’ to our patrons’ visits to Daaru,” he explains. With an inviting atmosphere and a mix of wines, beers, and cocktails, the venue is an ideal spot for post-work drinks, birthday celebrations, or a casual evening with friends.
Housed in the intimate first-floor space once occupied by Gingerboy, Daaru’s 35-seater bar is as much about the food as it is about the drinks. Its street-style menu offers bites that pair perfectly with its bold beverages, from masala peanuts to Chapati’s famous 65-spice chicken sliders. Vegetarians will also find plenty to love, including the ‘pinky kebabs’—a beetroot twist on a classic dish—served alongside makhani paneer-loaded fries.
