INGREDIENTS
375g Penne pasta (Couturing prefers this Gluten Free option from Barilla)
200g feta
1 punnet cherry tomatoes
2 zucchini
2 heaped tablespoons basil pesto (Couturing prefers this Pesto alla Genovese from Barilla)
METHOD
1. Bring water to the boil in a large pot. Add pasta when ready and cook until al dente.
2. Heat up oil in a pan and slice zucchini. Fry zucchini in pan until crispy and golden.
3. Halve cherry tomotoes and crumb feta.
4. Add pasta to a large bowl and mix through pesto. Add zucchini and cherry tomatoes.
