Christmas wrapped up nicely and the new year has ticked over without a hitch. People are heading back to work and some of us are still partying. Here is a recipe for an all occasions biscuit; whether you want to bring a basket of them to the office to soften the blow of coming back to work or if you still have to catch up with your partners extended family for a belated Christmas picnic, this is what you bring.
And for those of you whose new year’s resolution was to eat better but struggle to fight your sweet tooth, these biscuits include wholemeal flours and fruit so having one or two with a cup of tea won’t leave you sobbing on the scales.
This recipe makes roughly 40 biscuits so make them to share, and spread your sweetness.
Ingredients:
3 eggs well beaten
1 cup of sultanas
1 cup of unsalted butter
1 cup of brown sugar
1 cup of raw sugar
2 1/2 cups of wholemeal plain flour
1 teaspoon of cinnamon
2 teaspoons of baking powder
2 cups of oats
3/4 cup chopped nuts (we recommend either pistachio, cashews or peanuts- unsalted)
Method:
1. It’s important that you first combine the eggs and sultanas and allow them to sit for one hour.
2. Cream together the butter and sugars.
3. Add flour, cinnamon, baking powder and mix well.
4. Mix in eggs and sultanas, oats and chopped nuts.
5. The dough will be stiff.
6. Roll into balls and flatten slightly with the back of a fork.
7. Bake on 180 degrees for 10 minutes or until lightly browned.
8. Allow to cool on cooling rack.
9. Enjoy!
